Sorry I’m being a little lax regarding postings.
I’ve got a new recipe which I tried the other day. To be honest it’s just a variation on other soups I make but here it is:
1 litre of veg stock
4 sweet potatoes – peeled and roasted in olive oil first then chopped
2 carrots (diced)
mixed herbs (to taste)
1 couple of shakes of Worcestershire sauce
salt & black pepper (to taste)
1 chopped onion
Method:
Roast sweet potatoes in oven then chop.
Fry onion in (oil spray) or small amount of oil. Add sweet potato, carrots, herbs and sauce.
Fry for a few mins and then add stock.
Simmer for 30 – 40 mins. Take off heat and blend. Add salt & pepper to taste.
Also a little cumin/coriander is nice to add.
For protein add some creme fraiche or light cream or even some parmesan cheese.
