Mixed veg soup pureed

Hi all

I couldn’t think what to have for tea tonight.   In the fridge was  a bag of mixed fresh veg (broccoli, carrots, sweet potato) so I put it in a pan, added 2 pints of veg stock (oxo cubes) and a handful of pearl barley.  I also added some mixed herbs, some dried Cumin and a couple of splashes of worcestershire sauce.

Simmered it for about an hour and then blitzed it in the blender.  I also made my own dumplings – not good for you but I only have a very small one once a blue moon and the dietician knows I do this.

It tasted divine so I thought I’d share it with you all.  It’s the kind of dish you don’t have to have had bariatric surgery to enjoy and it will suit all stages, from pureed foods to regular food intake.

Just to add some protein, I added 2 tablespoons of grated parmesan cheese whilst it was cooking.

I haven’t had a lot of protein today so I had a gorgeous banana protein milkshake -so that should have helped.

I intend to get back to the gym for some cardio work starting next week.  It isn’t a new year resolution, I don’t do NY resolutions cos if I break them it brings me down and I don’t intend to get the ‘blues’ if I can help it.
